The Culinary Manager position is responsible for the overall supervision and management of the kitchen including purchasing, preparation, serving of meals, and sanitation.
This position supervises, develops, trains, hires, and provides overall management of the Culinary Assistants, Lead Culinary Assistant and Culinary Supervisor.
This position is also entrusted with the responsibility of planning and preparing meals and snacks for patients in various programs of Rosewood Ranch, a Monte Nido Affiliate.
Responsibilities Include:: Responsible for the overall preparation of appropriate food for individuals in eating disorder treatment, including managing culinary staff, planning menus, ordering of supplies, and monitoring food preparation to ensure food safety for meal consumption by clients and staff.
Interviews, hires, trains and manages culinary personnel in collaboration with the Director of Nutritional Services and the VP of Clinical Services.
Manages and assists staff preparing and portioning lunch and dinner daily for 30+ people, according to a pre-determined menu as well as specific caloric meal plans, using creativity to input new ideas contingent upon approval from the nutrition team.
Ensures meals are modified to accommodate client allergies, exclusions and other dietary needs as determined by the dietitian, while maintaining the nutritional quality and overall appeal of the meal.
Responsible for department budget including staffing and supplies.
Maintain food inventory within budget and minimizing waste.
Order and receive groceries multiple times weekly from approved purveyors and local grocery, ensuring products will be purchased based on the pre-determined menu, snack list and client needs.
Orders supplements and supplies through approved purveyors, ensuring sufficient stock is available.
Purchase and portion additional catered meals as needed, including staff meals and Family Workshop (if in person).
Bake or assign making desserts twice a week, or as necessary.
Attend meetings with the nutrition team to discuss ways to improve and enhance program, coordinate delivery of quality dietary services, as well as edit menu and snack lists accordingly.
Responsible for planning and teaching two client cooking classes each week (Adolescents and Adults) on lifelong cooking skills to be used when clients leave the treatment.
Maintain a clean kitchen and practice food safety standards, including recording of proper food/equipment temperatures, meeting or exceeding Joint Commission, Arizona Department of Health and the Yavapai Food and Health code requirements.
Qualifications:: High School Diploma or equivalent plus Culinary Arts Degree 5 years’ experience in quantity food preparation preferred.
3 years’ experience as a cook in a supervisory position with an institutional, hospital, hotel or fine dining setting preferred.
A minimum of one year of experience at a long-term care facility or catering experience.
Must have a valid driver’s license and a safe driving record as driving is a requirement of the job.
